Caribbean Glazed Ham Roast

Ingredients

  • 1.5 kg pork crackling roast (cured)
  • 1 red chili pepper
  • 4 tbsp Honey
  • 4 tbsp Lemon juice
  • 0.5 tsp ground ginger
  • 1 pinch piment powder
  • 1 pinch Cinnamon powder
  • 1 pinch coriander powder
  • 1 pinch cayenne pepper
  • 2 tbsp Vegetable oil
  • 200 ml meat stock

Instructions

    Preheat the oven to 200°C (400°F) with fan and top heat. Wash the pork, pat dry and score the crackling in a diamond pattern with a sharp knife or electric knife.

    Wash the chili, deseed and finely chop. Whisk together honey, lemon juice, ginger, chili, piment, cinnamon, coriander and cayenne to make a glaze.

    Heat oil in a roasting pan and sear the pork all around until golden. Pour in the meat stock and brush the roast with some glaze. Place the pan in the preheated oven and roast for about 90 minutes, glazing every 15 minutes. Remove the finished roast, let it rest briefly, slice and serve.
