Grilled Spare Ribs

Ingredients
- 2 kg pork rib (pre‑cooked)
- 2 onions
- 2 Garlic cloves
- 2 tbsp oil
- 150 ml dark beer
- 2 tbsp ketchup
- 2 tbsp Tomato paste
- 1 tsp liquid honey
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 tbsp paprika powder
- Salt
- Tabasco
- black pepper (freshly ground)

Wash the spare ribs, pat dry, place in a pot and cover with water; bring to a boil. Peel and halve one onion and one garlic clove, add to the water. Simmer for about 30 minutes.

Heat oil in a pan, dice the remaining onion and sauté until translucent. Add the minced garlic. Pour in beer, reduce slightly, then whisk together ketchup, tomato paste, honey, mustard, and Worcestershire sauce. Stir in paprika powder and season with salt, Tabasco, and pepper. Remove ribs from the broth, place on a hot grill, brush with the beer sauce, and grill 15–20 minutes, turning occasionally and basting frequently. Divide into individual ribs and serve plated; optionally accompany with coleslaw.
