Potatoes Wrapped in Aluminum Foil with Herb Quark

These super light potatoes wrapped in aluminum foil with herb quark from Spoonsparrow always look great!

Ingredients

  • 4 large, waxy potatoes (about 200 g each)
  • 400 g low‑fat quark
  • 2 tbsp chives
  • 1 tsp lemon juice
  • Salt
  • Pepper

Instructions

    Wash the potatoes thoroughly, pat them dry and wrap them tightly in aluminum foil. Prick the foil all around with a fork several times. Bake in a preheated oven at 200 °C (convection: 180 °C, gas: level 3) on the middle rack for about 50 minutes. If a fork can pierce the potato without resistance, it is done.

    Wash the chives, shake off excess water and cut into small rings. Mix with quark and season with lemon juice, salt and pepper.

    Unwrap the baked potatoes from the foil, slice them lengthwise and spoon 2 Tbsp of herb quark onto each half. Serve the remaining quark on the side.
