- 2 tart firm apples
- 30 g flour
- 50 g clarified butter
- 120 g whipping cream
- 0.5 tbsp brown sugar
- 1.5 tbsp plum wine
- 1 tbsp Sesame seeds
- 4 leaves lemon balm

Peel the apples, remove the core with an apple corer, cut the flesh into cubes and toss them in sifted flour. Heat the clarified butter and fry the apple pieces for 3 minutes until golden yellow. Toast the sesame in a dry pan without fat.

Beat the cream to stiff peaks, fold in the plum wine. Arrange the apple pieces on plates, sprinkle with sesame, add a dollop of cream on top, dust with brown sugar. Cut lemon balm leaves into fine strips and scatter over the dish.
