Figs with Lemon Foam Sauce

Ingredients

  • 20 g almond slivers (2 tbsp)
  • 4 ripe blue figs
  • 4 ripe green figs
  • 1 lemon
  • 1 egg
  • 125 ml cloudy apple juice
  • 15 g Honey (1 tbsp)

Instructions

    Roast the almond slivers in a dry pan until golden brown and set aside.

    Wash the figs and pat them dry. Slice the blue figs lengthwise into quarters, cut the green figs into rounds. Arrange on four dessert plates.

    For the foam sauce rinse the lemon hot, pat dry and finely grate some zest. Juice the lemon. Separate the egg white (use elsewhere). Beat the yolk with a pinch of lemon zest, 2 tbsp lemon juice, apple juice, and honey in a metal bowl, then whisk over a simmering water bath for 5–10 minutes until doubled in volume and fully incorporated.

    Pour the foam sauce over the figs on the plates and sprinkle the roasted almond slivers on top.
