Ingredients
- 4 day‑old rolls
- 1 tbsp butter
- 250 g flour
- ½ packet baking powder
- Salt
- 125 ml milk
- 2 Eggs
- pepper (ground)
- nutmeg

Dice the rolls and toast them in hot butter. Set aside.

In a bowl mix flour, baking powder, and a pinch of salt; gradually add milk while stirring well with the flour. Add the eggs one at a time. Season with pepper and nutmeg.

Fold the roll cubes into the dough and knead until it is soft and smooth but not sticky. With floured hands form two long rolls and let rest for 30 minutes.

Drop the rolls into boiling salted water, cover, and simmer gently for 30 minutes (do not boil!). Turn after 15 minutes. Remove the finished knödel and slice into rounds.
