Napkin Dumplings

Ingredients
- 6 old-fashioned rolls
- 2 tbsp butter
- 75 ml milk
- 300 g flour
- 15 g yeast
- 2 Eggs
- Salt
- 2 tbsp chopped parsley
- butter (for the napkin)

Dice the rolls and brown them in hot butter. Warm the milk slightly and mix with the yeast. Create a well in the flour, pour in the yeast mixture. Let this pre‑batter rise for about 15 minutes. Then beat the eggs into the well and knead everything together with a pinch of salt and parsley to form a yeasted dough. Fold in the roll cubes and let the dough rise covered in a warm place for about 30 minutes.

Roll the dough into a sausage shape, wrap it in a buttered, damp napkin or kitchen towel. Tie the ends tightly and cook in boiling salted water for 40‑45 minutes. Afterward unwrap the dumpling, slice it into rounds and serve immediately.
