Semolina Swiss Chard Rolls

Ingredients
- 8 beautiful swiss chard leaves
- 40 g hazelnut kernels
- 1 bunch spring onions
- 1 Garlic clove
- Salt
- Pepper (freshly ground)
- 4 tbsp oil
- 4 tbsp instant cornmeal
- 4 tbsp grated Pecorino
- 100 g canned pizza tomatoes
- 125 ml meat broth

Wash, clean and trim the stems of the swiss chard leaves.

Toast hazelnut kernels in a dry pan until fragrant, set aside to cool. Wash and finely slice spring onions; peel and mince garlic.

Bring salted water to boil and blanch the chard leaves for about 3 minutes. Remove, shock in ice water, drain, then cut thick central veins flat with a knife.

Roast hazelnuts lightly. Heat 2 tbsp oil in a pan. Sauté half of the spring onions and garlic until translucent; stir in cornmeal, nuts, and pecorino, seasoning with salt and pepper to taste.

Lay chard leaves on a work surface and spread the cornmeal mixture over them. Fold the sides over the filling and loosely roll, securing ends with wooden skewers.

Heat remaining oil in a deep pan. Sauté remaining spring onions and garlic; add tomatoes and meat broth, bring to a boil and season with salt and pepper. Place the chard rolls in the sauce, cover and simmer gently for about 45 minutes.
