Stuffed Onions with Cheese Crust

Ingredients

  • 4 large onions
  • Salt
  • 8 dried, pickled tomatoes (in oil)
  • 2 tbsp black, pitted olives
  • 150 g coarse breadcrumbs
  • 100 g melted butter
  • 1 tsp freshly chopped oregano
  • 1 tsp freshly chopped lemon thyme
  • 6 tbsp freshly grated parmesan

Instructions

    Preheat the oven to 180°C with top and bottom heat.

    Peel the onions and simmer in salted water for about 15 minutes until soft. Cool, halve and hollow out. Finely chop the drained tomatoes and olives. Mix with breadcrumbs, butter, chopped onion, oregano, lemon thyme, and combine into the onion shells. Place in a greased pan, sprinkle with Parmesan, and bake in the preheated oven for 20-25 minutes until golden brown.
