Semolina Porridge
The semolina porridge is a good source of protein with its combination of milk and semolina. Try this delicious recipe from Spoonsparrow.
Ingredients
- 2 tbsp raisins
- 250 ml milk (3.5% fat)
- 5 tbsp butter
- 2 tbsp whole grain sugar
- 1 tsp lemon zest
- 125 g wheat whole-grain semolina
- 100 g quark
- 1 egg

Wash the raisins and bring them to a boil in milk with 1 tbsp butter, sugar, and lemon zest. Add the semolina and cook into a thick porridge, then let it thicken for about 5 minutes over low heat while stirring occasionally until a thick, soft lump forms.

Whisk in the quark and egg. Heat 2 tbsp butter in an oven‑proof skillet and spread the semolina mixture like a pancake. Fry for about 1 minute until golden brown, flip, then bake in a preheated oven at 180 °C (fan 160 °C, gas: level 2–3) for 8–10 minutes.

After baking, tear the porridge into pieces with two forks. Mix in the remaining butter and, if needed, briefly stir on a hot plate again.
