Ingredients
- 6 sheets of red gelatin
- 600 ml red sparkling wine
- 1 lemon (juice)
- 20 g sugar (to taste)
- 150 ml heavy cream (30% fat)
- 1 packet vanilla sugar
- 1 tsp cream stabilizer
- rose-colored sugar pearls (for garnish)

Soak the gelatin in cold water for 10 minutes.

Bring the sparkling wine with lemon juice and sugar to a boil, then remove from heat. Squeeze out excess water from the gelatin, add it to the hot liquid, and stir until dissolved. Let cool slightly while stirring, then pour into pre-warmed champagne glasses and refrigerate for 2 hours.

After chilling, whip the cream with vanilla sugar and stabilizer until stiff peaks form. Fill a piping bag fitted with a star tip and dot the gelatin with small swirls of whipped cream. Garnish immediately with rose-colored sugar pearls.
