Quark Rolls

Ingredients
- 125 ml lukewarm milk
- 2 tbsp sugar
- 21 g fresh yeast (0.5 cube)
- 250 g flour
- 3 Tbsp liquid butter
- 1 egg yolk
- 500 g Low-fat quark
- 30 g cornstarch
- 75 g sugar
- 1 packet vanilla sugar
- 1 tsp lemon zest
- flour (for the work surface)

Whisk the milk with 1 tbsp sugar and crumbled yeast until smooth. Add flour, butter, remaining sugar, and egg yolk to a bowl, pour in the yeast mixture, and knead into a smooth dough using the paddle attachment of an electric hand mixer. Cover and let rise in a warm place for about 45 minutes. Preheat oven to 180°C (350°F) with upper and lower heat.

For the filling, mix quark with cornstarch, sugar, vanilla sugar, egg yolk, and lemon zest. Knead dough on a lightly floured surface and roll into a rectangle about 20 x 30 cm. Spread the quark mixture over the dough, roll from the long side, and cut into slices. Place on a baking sheet lined with parchment paper, cover, and let rise again for about 15 minutes.

Brush the rolls with egg yolk and bake in the preheated oven for about 25 minutes until golden brown. Remove from oven and cool. Serve with tea or coffee.
