Seeded Roll

Ingredients
- 250 g rye flour
- 250 g rye groats
- 150 g dry sourdough starter
- 1 tsp salt
- a pinch sugar
- 1 cube yeast (ca. 42 g)
- 500 ml lukewarm water
- 160 g mixed seeds (e.g., sunflower seeds, pumpkin seeds, flaxseed, sesame seed, oats)
Instructions

Mix the flour with groats, sourdough starter, salt and sugar in a bowl; press a well in the center, crumble yeast into it and stir with 2 tbsp water. Dust the edges with a little flour and cover to rise in a warm place for 15 minutes. Then add the seeds (minus 6 tbsp) and knead with the remaining water into a smooth dough. Add more lukewarm water or flour if needed. Cover and let rise another 45 minutes.

Preheat the oven to 200°C (400°F) with top and bottom heat.

Knead the dough again, divide into 80 g portions. Shape into rolls and let rest for 15 minutes. Brush with water, press in remaining seeds, place on a parchment-lined baking sheet. Bake in the preheated oven for about 25 minutes. Remove, cool, and serve.
