- 0.5 Grapefruit
- 0.5 lemon
- 0.5 Orange
- 1 tbsp honey
- 12 sea scallops
- 2 tbsp butter
- 200 g cooked chestnuts (vacuum packed)
- Salt
- Cayenne pepper

Peel the citrus fruits, remove the white pith and separate the fruit segments from the membranes. Catch the released juice and finely chop the segments. Mix the juice with honey, lime zest and chopped segments.

Wash the scallops, pat dry and sear in a hot pan with butter for 2-3 minutes on each side. Add the chestnuts, let them wilt briefly, season with salt and pepper, then plate the scallops. Drizzle with the citrus vinaigrette before serving.
