Baked Pumpkin with Honey

A great starter with a slightly sweet note: try the baked pumpkin with honey from Spoonsparrow!
Ingredients
- 600 g Hokkaido pumpkin flesh, deseeded
- 2 tbsp olive oil
- 1 tbsp roasted peanuts (coarsely chopped)
- 1 tbsp pumpkin seeds (coarsely chopped)
- Salt
- Pepper (freshly ground)
- 2 tbsp lemon juice
- 0.5 tsp honey
- 3 tbsp olive oil
Instructions

Cut the pumpkin into wedges, brush with olive oil and bake in a preheated oven at 200°C until tender but firm (about 15–20 minutes).

Whisk together lemon juice, pepper, salt, honey and olive oil; taste and stir in the peanuts and pumpkin seeds.

Arrange the baked pumpkin on plates and drizzle with the dressing.
