Baked Pumpkin with Honey

A great starter with a slightly sweet note: try the baked pumpkin with honey from Spoonsparrow!

Ingredients

  • 600 g Hokkaido pumpkin flesh, deseeded
  • 2 tbsp olive oil
  • 1 tbsp roasted peanuts (coarsely chopped)
  • 1 tbsp pumpkin seeds (coarsely chopped)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp lemon juice
  • 0.5 tsp honey
  • 3 tbsp olive oil

Instructions

    Cut the pumpkin into wedges, brush with olive oil and bake in a preheated oven at 200°C until tender but firm (about 15–20 minutes).

    Whisk together lemon juice, pepper, salt, honey and olive oil; taste and stir in the peanuts and pumpkin seeds.

    Arrange the baked pumpkin on plates and drizzle with the dressing.
