Sea Bream with Apple Slices

Ingredients
- 800 g sea bream fillets (8 fillets)
- Salt
- Pepper
- 10 g parsley (0.5 bunch)
- 2 Apples
- 15 g Butter (1 tbsp)
- 2 tbsp honey
- 10 g spelt whole‑grain flour (1 tsp)
- 150 ml apple juice (or cider)
- 20 g crème fraîche (1 tbsp)
- 1 tbsp Olive Oil
Instructions

Rinse sea bream fillets under cold water and pat dry. Season with salt and pepper. Wash parsley, shake dry and chop.

Wash apples, quarter, core and cut into slices.

Melt butter in a pan with honey to lightly caramelize. Add apple slices and sauté over low heat for about 3 minutes.

Meanwhile heat oil in a non‑stick skillet. Cook fish over medium heat, turning once, until golden brown on both sides (about 3–4 minutes).

Remove apple slices after 3 minutes, stir in flour, deglaze with juice and simmer gently over low heat until slightly thickened. Stir in crème fraîche and season with salt and pepper. Remove from heat and place apple slices back into the pan.

Serve fish with apple sauce on four plates and sprinkle with parsley.
