Sea Bass Wrapped in Bacon

Ingredients
- 300 g sea bass fillet (ready to cook)
- 4 Garlic cloves
- 4 tbsp olive oil
- 6 slices bacon
- 200 g Sugar snap peas
- 2 large potatoes (firmly boiling)
- 1 Shallot
- Salt
- Pepper (freshly ground)
- chili peppers (crushed)
Instructions

Blanch the sugar snap peas in salted water for a few seconds. Shock and drain well.

Peel the shallot and slice into rings.

Peel the potatoes and cut into about 0.5 cm thick slices. Place in a baking dish, season with salt and pepper, drizzle with 2 tbsp oil. Bake in a preheated oven at 180°C (convection) for about 20 minutes until golden brown.

Meanwhile, lightly pepper the sea bass, wrap each fillet in bacon slices, and place in a baking dish. Drizzle with 2 tbsp olive oil and add the peeled garlic cloves.

Reduce the oven temperature to 120°C and scatter the sugar snap peas and shallot rings among the potatoes.

Return the sea bass to the oven and braise everything together for another 15-20 minutes.

Before serving, slice the sea bass, season with a little salt and cayenne pepper, and serve with the seasoned potatoes and sugar snap peas.
