Ingredients

  • 8 matjes fillets
  • 1 bunch radishes
  • 1 apple
  • 1 onion
  • 2 pickled cucumbers
  • 2 tbsp chives sprigs
  • 200 g whipping cream
  • 250 g yogurt
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper (freshly ground)

    Cut the matjes fillets into finger‑wide strips. Wash, trim and slice the radishes thinly. Wash the apple, quarter it, remove the core and slice the quarters crosswise into fine slices. Peel, halve and cut the onion into thin strips. Dice the pickled cucumbers. Whisk together the whipping cream, yogurt and vinegar. Mix in the matjes, radishes, apple, onion, cucumbers and chives thoroughly. Season with salt and pepper. Let the salad chill for 1 hour before serving.
