Ingredients

  • 700 g savoy cabbage
  • 6 tbsp oil
  • Salt
  • Pepper
  • 250 ml vegetable broth
  • 40 g pine nuts
  • 100 g thick-cut smoked bacon
  • 1 Garlic clove
  • 250 g Cherry Tomatoes
  • 4 basil leaves
  • 80 g Pecorino cheese

Instructions

    Clean the cabbage, quarter it and rinse. Cut into large strips. Heat 4 tbsp oil in a Dutch oven. Sauté the cabbage. Season with salt and pepper. Add the broth and simmer covered for 20 minutes.

    Roast the pine nuts in a non-stick pan without extra fat and set aside.

    Slice the bacon into strips, peel the garlic and cut into rounds. Add 2 tbsp oil to the pan and fry the bacon until crispy. Add the garlic. Rinse the tomatoes and halve them. Pull basil leaves from stems and add with tomatoes to the pan. Steam uncovered for 1 minute, season with pepper and distribute over the cabbage strips.

    Before serving sprinkle with pine nuts and grated pecorino.
