Ingredients
- 500 g pork fillet (evenly thick pieces)
- Salt
- Pepper
- 2 tbsp oil
- 40 ml dry vermouth (e.g., Noilly Prat)
- 200 ml whipping cream
- 125 g crème fraîche
- 6 sprigs Mint
- 500 g princess beans
- Salt
- 1 red bell pepper
- 1 tbsp butter
- Pepper

Slice pork fillet into rounds. Season with salt and pepper. Heat oil in a non-stick pan. Brown the meat on both sides. Deglaze with vermouth. Pour in cream and stir in crème fraîche. Let the sauce simmer gently and cook the meat for about 5 minutes. Finely chop mint leaves and fold them into the sauce. Adjust seasoning with salt and pepper.

Rinse, trim, and boil beans in salted water for 6-8 minutes. Quarter the bell pepper, clean, rinse, and dice it small. Heat butter. Sauté pepper for 2-3 minutes. Drain beans and add to the pan, tossing briefly. Plate everything together.
