Tomato Ragout with Beef Fillet

- 800 g beef fillet
- 1 onion
- 2 Garlic cloves
- 500 g fresh tomato
- 2 green bell peppers
- 4 tbsp herb butter
- 1 tsp vinegar
- Salt
- Pepper
- 1 bunch fresh coriander

Slice the meat into thin strips. Peel and finely chop the onion and garlic. Boil the tomatoes, peel, core, and roughly chop them. Clean, wash, and dice the bell peppers. Heat the herb butter in a wide pan and sear the fillet strips in batches, then remove.

In the same pan, sauté the onion and garlic until translucent. Add the tomatoes and pepper cubes, stir, and simmer for 10 minutes. Season with vinegar, salt, and pepper, then cover and cook for about 10 minutes over medium heat.

Add the meat and its juices to the sauce and warm for 5 minutes. Wash, dry, and finely chop the coriander. Taste the dish, fold in the coriander, and serve with buttered baguette.
