Ingredients
- 60 g sugar
- 2 tbsp cocoa powder
- 80 g milk chocolate couverture
- 2 tbsp honey
- 1 pinch Cinnamon powder
- 1 pinch ground cardamom
- 400 ml whipping cream
- 250 ml whisky (or rum)

Whisk the sugar with the cocoa and 5 tbsp water well. Chop the chocolate and melt it with the honey, cinnamon, and cardamom over a double boiler. Bring the cream to a boil. Remove from heat, add the cocoa mixture, then stir in the melted chocolate vigorously. Let cool completely while stirring occasionally. Then beat with an electric mixer until creamy, incorporating the whisky. Transfer to a bottle and store in a cool, dark place.
