Ingredients

  • 1 Vanilla bean
  • 300 g green walnuts
  • 1 piece ginger (ca. 2 cm)
  • 300 g brown candied sugar
  • 1 l alcohol (e.g., fruit brandy or Korn)

Instructions

    Slice the vanilla bean lengthwise and scrape out the seeds. Roughly chop the nuts and combine them with the vanilla seeds, the whole pod, ginger, sugar, and spirit in a large mason jar. Store in a warm place for about 4 weeks, shaking occasionally.

    Filter through a coffee filter or linen cloth, pour into a clean bottle, seal tightly, and let rest another 8 weeks in a dark place. Optionally sweeten with simple syrup.
