Ingredients
- 2 carrots
- 75 g unsweetened muesli mix (optional)
- 25 g coconut flakes
- 90 g spelt flour type 1050
- 60 g whole grain sugar
- 0.5 tsp cinnamon
- 1 pinch salt
- 2 tsp Baking powder
- 1 tsp Baking Soda
- 50 ml whipping cream
- 2 Eggs
- 60 g liquid butter
- 1 Banana
- 2 tbsp coconut chips (10 g each)
Instructions

Peel and finely grate the carrots. Mix muesli with coconut flakes. Line muffin pan cavities with paper liners.

In a bowl, whisk together flour, 3/4 of the muesli-coconut mixture, sugar, cinnamon, pinch of salt, baking powder, and baking soda.

Whisk cream and eggs in another bowl; add liquid butter to the dry mix and stir briefly. Peel banana, mash with a fork, and fold into batter along with grated carrots.

Fill liners, sprinkle remaining muesli-coconut mix on top, and bake at 200 °C (180 °C fan) for about 25 minutes. Let muffins cool in pan for 5 minutes, then transfer to wire rack to finish cooling. Garnish with coconut chips.
