Ingredients

  • 100 g white couverture chocolate
  • 100 g dark bitter couverture chocolate
  • 3 spritz of white rum
  • 1 tsp grated untreated orange zest
  • 1 tbsp brown rum
  • 1 Banana
  • 100 g green grapes
  • 100 g blue grapes
  • 6 physalis (Cape gooseberries)
  • 100 g dried fruit (e.g. apricots, mango, papaya)

Instructions

    Separate the couverture chocolate into two portions. Place each in a small bowl and melt over a hot water bath. Stir white rum and orange zest into the white couverture. Stir brown rum into the dark bitter couverture.

    Peel the banana and cut it into pieces. Rinse the grapes, pat them dry, and pluck them from the stems. Dip the fruits into the chocolate coatings, wipe off excess coating on the rim of the bowl, and place the fruits on a sheet of parchment paper or a cooling rack. Let the chocolate set.
