Lebkuchenmousse

Ingredients
- 4 sheets of white gelatin
- 150 ml milk
- 10 g cocoa powder
- 2 tbsp honey
- 2 tsp gingerbread spice
- 250 ml Whipping Cream
- 1 packet vanilla sugar
- each 50 g dark chocolate couverture and 50 g white chocolate couverture
Instructions

Soak the gelatin according to package instructions until it swells. Boil the milk, cocoa, honey, and gingerbread spice together. Dissolve the gelatin in the hot (but not boiling) liquid and let it cool. Whip the cream with vanilla sugar until stiff peaks form and fold into the mixture while it begins to set.

Fill the mousse into dessert glasses and chill until firm.

To garnish, melt the chocolate separately, place in a freezer bag, seal tightly, cut off a small corner, and use a stencil to pipe designs onto parchment or plastic wrap. Pipe dark chocolate along the outlines, let set, then fill the interiors with white chocolate.

Carefully remove the hardened decorations with a knife and press them onto the mousse using their smooth side, or pipe a smaller white circle of chocolate onto a darker ring and blend colors with a wooden stick.
