Ingredients
- 50 g sugar
- 200 ml red wine
- 200 ml cherry juice
- 0.5 cinnamon stick
- 0.5 Vanilla pod
- 400 g cherries
- 60 ml cherry liqueur
- 1 tsp Cornstarch
- 150 ml whipping cream

Caramelize the sugar in a pot. Deglaze with the wine and juice. Add the cinnamon and split vanilla, then simmer gently over low heat for about 10 minutes.

Wash and pit the cherries. Set aside 8 pieces for garnish if desired. Remove the cinnamon and vanilla, add the cherries to the pot. Stir in 4 cl liqueur with the cornstarch to lightly thicken the ragout. Bring to a boil and then remove from heat.

Whisk the cream with the remaining liqueur until creamy.

Fill heat‑proof glasses with the ragout, top with cherry cream, and garnish with cherries before serving.
