Ingredients
- 12 fresh scallops (ready to cook)
- 2 Avocados
- 1 pinch piment (freshly crushed)
- 1 pinch dried chili peppers (freshly crushed)
- juice of one lime
- 2 tbsp pecan oil
- Sea salt
- organic rose petals (for garnish)

Wash the scallops, pat dry and cut across into 2-3 slices depending on thickness.

Halve the avocados, remove the pit, peel and slice very thinly. Drizzle immediately with some lime juice and arrange decoratively with the scallop slices on plates. Finish by drizzling remaining lime juice and oil, sprinkle with spices and sea salt, and garnish with rose petals before serving.
