Fried Anchovies with Sun-Dried Tomatoes

Ingredients

  • 800 g fresh sardines
  • flour
  • 50 ml olive oil
  • 1 lemon (unprocessed)
  • 5 garlic cloves
  • 2 Bay leaves
  • 1 sprig rosemary
  • 200 g sun-dried tomatoes (in oil)
  • smooth parsley (chopped)
  • Sea salt
  • black pepper

Instructions

    Make shallow cuts along the belly of each sardine, remove heads behind the gills from the central spine and discard innards. Rinse belly cavities thoroughly with cold water and pat dry with kitchen paper. Cover and refrigerate.

    Peel garlic cloves and finely chop. Drain sun-dried tomatoes and chop them. Halve the lemon, squeeze half for juice, cut the other half into thin slices.

    Heat oil in a pan without overheating; fry sardines with bay leaves, rosemary sprigs, garlic cloves, and chopped sun‑dried tomatoes for 4–6 minutes. Deglaze with lemon juice, season with salt and pepper. Serve garnished with lemon wedges alongside white bread.
