Ingredients

  • 8 fresh ready-to-cook sardines
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp fennel seeds
  • 2 cloves garlic
  • olive oil

Instructions

    Wash and pat dry the sardines. Season with salt and pepper. Peel the garlic and dice into small cubes.

    Heat 4 tbsp olive oil in a pan and cook the sardines for 2-3 minutes on each side until done. Remove the sardines from the oil and drain excess fat on paper towels.

    Add another 2 tbsp oil to the pan and sauté the garlic and fennel seeds until the garlic cubes turn golden yellow.

    Remove the pan from heat. Serve the sardines drizzled with the garlic-fennel oil, seasoning again with salt and pepper if desired. Pair with a green salad of raw fennel.
