Ingredients

  • 0.5 head savoy cabbage
  • 1 stale roll
  • 1 onion
  • 2 tbsp chopped parsley
  • 1 tbsp butter
  • 400 g mixed ground meat
  • 1 tsp dried marjoram
  • a pinch ground caraway
  • 1 tsp sharp mustard
  • Salt
  • Pepper (freshly ground)
  • 4 Carrots
  • 2 parsley roots
  • 2 tbsp butter
  • a pinch sugar
  • 200 ml water
  • 1 tbsp chopped parsley

    Preheat the oven to 180°C fan.

    Wash the savoy cabbage. Remove leaves from the stem and blanch for about 6 minutes, then drain well. Soak the roll in lukewarm water. Peel and finely chop the onion; sauté in butter until translucent. Mix the drained roll with egg, ground meat, onions, parsley, marjoram, caraway, and mustard. Season with salt and pepper. Grease eight muffin tins and line with cabbage leaves. Spoon the mixture into the tins and cover with remaining leaves. Bake for about 20 minutes on a middle rack.

    Peel and cut carrots and parsley roots into halves or quarters depending on size; chop into large pieces. Sauté the vegetables in butter, caramelize with sugar, then deglaze with water. Simmer gently for about 15 minutes until liquid evaporates. Season with salt and pepper, add parsley, plate the stewed veg, top with the savoy cabbage meat packets, and serve.
