Ingredients
- 400 g red onions
- 4 rump steaks (180 g each)
- Salt
- Pepper
- 2 tbsp oil
- 40 g Butter
- 1-2 tbsp sugar
- 500 ml red wine
- 1 sprig rosemary
Instructions

Peel and halve the onions, then slice thinly. Season both sides of the steaks with salt and pepper and sear in hot oil for 2‑3 minutes per side. Transfer to a preheated oven at 100 °C on a rack and rest for 20 minutes.

Whisk butter into the pan fat until foamy, then sauté onions until translucent. Sprinkle sugar, deglaze with red wine, season with salt and pepper, and reduce over medium heat for 6‑8 minutes. Finely chop rosemary and add to the sauce.
