Ingredients

  • 100 g round grain rice
  • 200 ml vegetable broth
  • Salt
  • 8 large white cabbage leaves
  • 400 g mixed ground meat
  • 1 tsp sharp mustard
  • 1 egg
  • 1 tsp freshly chopped rosemary
  • 2 tbsp breadcrumbs
  • pepper (ground)
  • 1 stalk leek
  • 3 Tbsp liquid butter

Instructions

    Wash the rice in a sieve and bring to a boil in a pot with the broth. Cover and simmer over low heat for about 20 minutes until all liquid is absorbed. Fluff the rice and let it cool.

    Cut thick strips from the cabbage leaves. Blanch in boiling salted water for 1-2 minutes, then shock in cold water and drain well.

    For the filling mix the ground meat with mustard, egg and rosemary. Add the rice and, if needed, some breadcrumbs so the mixture holds together. Season with salt and pepper and spread onto the center of each cabbage leaf. Fold in the sides and roll up.

    Wash and trim the leek, remove 8 leaves and blanch for 2-3 minutes. Shock and use to tie the rolls together.

    Place the rolls in a steamer basket, brush with butter, season with salt and pepper, cover and steam for about 10 minutes until cooked through.

    Serve garnished with tomatoes and rosemary if desired.
