Savory vegetable muffins from Spoonsparrow are quick to make and always delicious!

Ingredients

  • 1 Broccoli
  • 6 dried tomatoes in oil
  • 1 Red Onion
  • 1 bunch basil (20 g)
  • 60 g cheddar (50 % fat in cream)
  • 250 g spelt flour Type 1050
  • 2 tsp Baking powder
  • 200 g quark (20 % fat)
  • 2 Eggs
  • Salt
  • 1 tsp Rapeseed oil
  • 50 g Pumpkin seeds

Instructions

    Clean, wash, peel the stem and cut the broccoli into small pieces. Drain the dried tomatoes well and chop them finely. Peel and dice the onion. Wash, dry, shake off excess water from the basil leaves, pluck them and slice into strips. Grate the cheddar.

    Whisk together flour, baking powder, quark, eggs, and ½ tsp salt until smooth. Fold in the vegetables, basil, and cheddar. Lightly oil muffin cup recesses and fill with batter. Sprinkle pumpkin seeds on top.
