Whole Grain Bruschetta

Bruschetta pomodoro from Spoonsparrow is the perfect appetizer in summer!

Ingredients

  • 2 slices whole grain bread
  • 1 shallot (chopped)
  • 2 Tomatoes
  • 1 tbsp Lemon Juice
  • Sea salt
  • Pepper (freshly ground)
  • 2 tbsp chopped basil
  • 3 tbsp olive oil

Instructions

    Drizzle 1 tbsp olive oil on both sides of each slice of whole grain bread. Toast in a hot pan until golden brown.

    Wash, quarter, seed and dice the tomatoes. Mix with shallot cubes, lemon juice, olive oil, and basil; season with salt and pepper. Let sit for about 5 minutes.

    Spread the tomato mixture onto the toasted bread slices and serve immediately.
