Savory Surimi Muffins

Ingredients

  • 200 g surimi
  • 2 carrots
  • 275 g flour
  • 4 sprigs basil (fresh chopped)
  • 0.5 tsp paprika powder
  • 1 tsp salt
  • 50 g freshly grated Parmesan
  • 3 tsp baking powder
  • 0.5 tsp bicarbonate of soda
  • 1 egg
  • 125 g butter
  • 250 g plain yogurt
  • pepper (ground)
  • vegetable oil for greasing

Instructions

    Grease muffin tins with a little oil and set aside in the refrigerator. Preheat the oven to 180°C fan.

    Cut the surimi into about 1 cm pieces. Peel and grate the carrots coarsely; if they are too juicy, squeeze out excess moisture. Mix them with flour, basil, paprika powder, salt, parmesan, baking powder, and bicarbonate of soda. Beat the egg and whisk it with butter and yogurt in a mixer. Quickly fold this mixture into the batter, season with pepper, then stir in the surimi. Divide the dough evenly among 12 muffin cups.

    Bake for about 30 minutes in the preheated oven. Let them rest on the tray for another 5 minutes, then remove and cool on a wire rack.
