Ingredients

  • soft butter (for the cups)
  • flour (for the cups)
  • 150 g butter
  • 100 g sugar
  • 1 vanilla bean (pulp)
  • 3 eggs
  • 150 g flour
  • 80 g Ovomaltine
  • 2 tbsp cocoa powder
  • 3 tsp baking powder
  • 1 tsp rum
  • 150 g chocolate (70% cacao)
  • 300 ml whipping cream
  • white chocolate stars
  • 12 chocolate balls

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat. Butter the muffin tin cavities and dust them with flour.

    Cream the butter with sugar and vanilla pulp. Beat in eggs one at a time, ensuring each is fully incorporated. Mix flour, Ovomaltine, cocoa powder, and baking powder together, then fold into the batter. Add rum and pour the mixture into the cups. Bake for about 30 minutes or until a toothpick comes out clean.

    For the topping, roughly chop the chocolate and place it in a bowl. Heat the cream, pour over the chocolate, and whisk until smooth. Chill for about four hours, then whip with hand mixer until fluffy. Pipe onto cupcakes as desired and garnish with white chocolate stars and chocolate balls.
