Raspberry Muffins

Ingredients

  • 150 g butter
  • 100 g sugar
  • 1 tsp lemon zest (unprocessed)
  • 2 tbsp vanilla sugar
  • 4 eggs
  • 60 g flour
  • 150 g semolina
  • 1 tsp Baking powder
  • 12 chocolate truffles
  • 300 g raspberries

Instructions

    Preheat the oven to 180°C with upper and lower heat. Line the cavities of a muffin tin with paper liners.

    Beat the butter with the sugar, lemon zest, and vanilla sugar until fluffy. Separate the eggs; beat the yolks with the remaining two eggs. Gradually fold into the butter mixture. Mix flour, semolina, and baking powder together and stir quickly in. Whisk the egg whites to stiff peaks and fold into the batter.

    Fill about half of each cup with batter and press a chocolate truffle into the center. Fold in raspberries gently and mix lightly with the remaining batter. Fill the cups again and bake for about 25 minutes.

    Remove from oven, take out of tin, and let cool.
