Savory Pear Tart with Caramelized Onion and Blue Cheese

Ingredients
- 200 g puff pastry
- 2 onions
- 2 tbsp sunflower oil
- 1 tsp sugar
- Salt
- black pepper (freshly ground)
- 2 pears
- 1 tbsp butter
- 1 tbsp Lemon Juice
- 20 g walnut kernels
- 80 g Gorgonzola cheese
- 1 tsp freshly chopped rosemary

Preheat the oven to 200°C (400°F) with top and bottom heat. Roll out the puff pastry and cut four circles about 12 cm in diameter. Place them on a baking sheet lined with parchment paper.

Peel the onions and slice into rings. In hot oil, slowly sauté for about 8 minutes while stirring until they begin to color. Add sugar and season with salt and pepper. Spread over the pastry circles, leaving a border of about 1 cm, and bake in the oven for approximately 15 minutes until golden brown.

Meanwhile, wash the pears, quarter them, remove the core, and cut the flesh into strips. In hot butter, sauté for about 4 minutes at moderate heat until lightly browned. Remove from heat and drizzle with lemon juice.

Combine the roughly chopped walnuts, crumbled Gorgonzola, and rosemary; spread over the finished tarts and serve.
