The hearty-filled vegan baked apple with spelt stuffing creates a festive Christmas atmosphere and provides plenty of satisfying fiber.

Ingredients
- 15 g ground spelt (1 tbsp)
- 40 ml apple juice
- 4 hazelnut kernels
- 1 tbsp unsulfured raisins
- 1 pinch cinnamon (preferably Ceylon cinnamon)
- 150 g apples (1 apple)
Instructions

Mix the spelt and apple juice in a small bowl and let soak for 1 hour.

Then finely chop with hazelnuts and raisins using a food processor. Season with 1 pinch of cinnamon.

Wash the apple, dry it, cut off the top as a lid, and hollow out the core generously.

Place the apple in a small baking dish and fill it with the spelt mixture. Put the "lid" back on, pour in 3 tbsp water, and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 20 minutes.

Remove the vegan baked apple, let it cool slightly, and serve warm.
