Savory Mushroom and Leek Tart

Ingredients
- 150 g flour
- 100 g butter
- 1 egg
- 1 tsp salt
- 2 stalks leek
- 400 g mixed mushrooms (e.g., oyster, porcini, chestnut)
- 200 g Sour Cream
- 150 ml whipping cream
- 1 tbsp thyme
- 50 g grated cheese (e.g., mountain cheese)
- 2 Eggs
- Salt
- pepper (ground)
- nutmeg
- thyme sprig (for garnish)
Instructions

Knead flour, butter, egg and salt into a shortcrust dough, wrap in cling film and chill for 30 minutes.

Preheat the oven to 180°C fan.

Roll out the dough between cling film to about 3 cm thickness and place in a tart pan. Raise a rim of about 3 cm. Blind bake for about 15 minutes.

For the filling wash, trim and slice the leeks into rings. Clean and cut the mushrooms into pieces. Sauté together in hot butter for 2-3 minutes, then remove from heat. Spread on the pastry base (without any liquid that may have formed). Whisk the sour cream with the whipping cream, thyme, cheese and eggs; season heavily with salt, pepper and nutmeg. Pour over the leek-mushroom mixture and bake in the oven for about 30 minutes until set.
