Ingredients
- 150 g zucchini
- 150 g eggplant
- 1 small carrot
- 275 g flour
- 1 egg
- 125 g butter
- 250 g plain yogurt
- 70 g grated Gruyere cheese
- 4 stems basil (fresh chopped)
- 0.5 tsp paprika powder
- 0.5 tsp Baking soda
- 3 tsp baking powder
- 1 tsp salt
- pepper (ground)
- oil (for greasing)

Grease muffin tins with a little oil and set aside in a cool place. Preheat the oven to 180°C fan.

Wash and finely dice the vegetables. Mix them with flour, herbs, spices, baking powder, and baking soda. Beat the egg and blend it with butter and yogurt using a mixer. Quickly combine all remaining ingredients into a dough. Evenly distribute the dough among the 12 muffin cups.

Bake for about 30 minutes in the preheated oven until golden brown. Then let rest on the tray for another 5 minutes, remove, and cool on a rack.
