Ingredients
- 150 g ground beef
- 1 Tbsp clarified butter
- 280 g flour
- 0.5 tsp Salt
- 0.5 tsp sweet paprika
- 2 tbsp chopped pistachios
- 1 Shallot
- 1 Garlic clove
- 2.5 tsp baking powder
- 0.5 tsp Baking soda
- 1 egg
- 50 ml plant oil
- 300 g buttermilk
- 40 g chopped pistachios
- 1 muffin tin (12 cups)
- butter (for the pan)
Instructions

Grease the muffin tin cavities.

Brown the ground beef in clarified butter, stirring until crumbly.

Peel and finely chop the shallot. Peel the garlic.

Combine flour with spices, pistachios, beef, shallot, baking powder, and baking soda; squeeze in the garlic and mix.

In a large bowl lightly whisk the egg, then add oil and buttermilk, mixing well. Add the dry mixture to the wet until just moist.

Divide batter into tin cavities and sprinkle each with some chopped pistachios. Bake in preheated oven at 180°C (mid) for about 20–25 minutes. Let muffins rest in the tin for 5 minutes, then lift out and serve immediately.
