Paprika-Ricotta-Muffin

Ingredients
- 2 stalks basil
- 1 small onion
- 2 red bell peppers
- 60 ml olive oil
- 1 Garlic clove
- Salt
- Pepper
- 2 Eggs
- 250 g ricotta
- 100 g grated Parmesan
- 250 g flour
- 2 tsp Baking powder

Preheat the oven to 180°C (350°F) with both top and bottom heating. Line a muffin tin with paper liners.

Wash the basil, shake off excess water, and finely chop the leaves. Peel and dice the onion into small cubes. Wash, deseed, and dice the bell peppers. Blend half of the diced onions with half of the bell pepper pieces, olive oil, and peeled garlic until smooth. Mix in the remaining basil, bell pepper, and onion cubes, seasoning generously with salt and pepper.

Whisk the eggs in a large bowl and fold in the ricotta. Combine the parmesan, flour, and baking powder; stir into the wet mixture. Fold in the vegetable blend, then spoon the batter into the prepared liners. Bake for 25-30 minutes until golden brown. Remove from oven, let cool briefly, then take out of the tin and serve warm or cold.
