Savory Flammkuchen with Turkey Bacon
We love flammkuchen! Try the savory flammkuchen with turkey bacon à la Spoonsparrow.
Ingredients
- 400 g spelt flour type 1050
- 7 g dry yeast (1 packet)
- 1 tsp salt
- 100 g turkey bacon (sliced)
- 2 onions
- 200 g Low-fat quark
- 200 g crème fraîche
- 1 egg yolk
- black pepper from the mill
- 2 tbsp chives rolls

Mix flour with yeast and 1 tsp salt, then knead with about 225 ml lukewarm water into a medium‑firm dough until it releases from the bowl. Cover and let rise in a warm place for about 30 minutes.

Roll the dough on a lightly floured surface into four thin flatbreads and place them on parchment paper cut to sheet size. Dice the bacon, peel and finely chop the onions. Whisk quark with crème fraîche and egg yolk, seasoning with salt and pepper. Spread the mixture onto the dough rounds leaving a border, then distribute onions and bacon over it.

Place a preheated baking tray in the oven, carefully lift the parchment with the flammkuchen onto it, and bake at 240 °C (fan: 220 °C; gas: level 4) for 10–15 minutes until golden brown. Sprinkle with chives before serving.
