Ingredients

  • 350 g flour
  • 150 g Low-Fat Quark
  • 5 tbsp milk
  • 5 Tbsp plant oil
  • 2 Eggs
  • 1 tbsp baking powder
  • a pinch salt
  • 5 eggs
  • 350 ml whipping cream
  • 200 g Sour Cream
  • 250 g freshly grated Gruyère cheese
  • 250 g freshly grated Emmental cheese
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 0.5 bunch Chives

Instructions

    Preheat the oven to 180°C with top and bottom heat.

    Put all dough ingredients into a bowl and mix with the dough hooks of an electric hand mixer until smooth. If the dough is too wet, add more flour; if it’s too dry, add a bit more milk.

    Roll out the dough onto a baking sheet lined with parchment paper, forming a rim around the edges.

    For the topping whisk the eggs with cream and sour cream, stir in the cheeses, and season with salt, pepper, and nutmeg. Spread this mixture over the dough base and bake in the preheated oven for about 1 hour. Cover promptly with buttered parchment to prevent burning of the top surface.

    Remove the finished cake from the oven, let it cool, cut into pieces, sprinkle with chives, and serve on fresh salad if desired.
