Ingredients

  • 400 g raspberries
  • 2 tbsp vanilla sugar
  • 20 ml raspberry liqueur
  • 250 ml Whipping Cream
  • 125 g quark
  • 50 g liquid butter
  • 4 tbsp sugar
  • 1 tsp lemon zest
  • 3 eggs
  • 150 g flour
  • 125 ml milk
  • butter (for the waffle iron)
  • powdered sugar (for dusting)
  • mint (for garnish)

Instructions

    Blend the raspberries, set aside some for garnish, mix the rest with vanilla sugar, puree and strain through a sieve. Add the raspberry liqueur. Whip the cream stiff, fold in and refrigerate.

    For the batter, mix quark with butter, sugar and lemon zest. Separate the eggs; gradually add yolks. Fold in flour, then whisk in milk until smooth. Beat egg whites stiff and fold into batter. Grease waffle iron surfaces with a little butter, heat, and pour batter to bake golden waffles as they rise.
