Ingredients

  • 500 g fresh cherries (or canned cherries)
  • 3 tbsp Lemon juice
  • 1 packet vanilla sugar
  • 750 g low-fat quark
  • 4 eggs
  • 125 ml milk
  • 2 packets Vanilla Pudding Powder
  • 125 g sugar
  • 1 pinch salt
  • butter (for the pan)
  • bread crumbs (for the pan)
  • powdered sugar (to dust)

Instructions

    Wash and pit cherries (if using canned, drain well).

    Separate eggs. Mix egg yolks, milk, pudding powder, lemon juice, vanilla sugar, sugar, and 1 pinch salt with the quark.

    Brush the pan with butter and coat with bread crumbs.

    Beat egg whites until stiff and fold into the quark mixture. Pour batter into the pan and smooth top. Arrange cherries on top and press slightly. Bake in preheated oven at 180°C (mid rack) for about 1 ¼ hours, checking doneness. Remove, let cool a bit, unmold, and allow to cool completely. Dust with powdered sugar before serving and cut into pieces.
