Sausage-Cheese Salad with Egg

Ingredients

  • 0.5 bunch Chives
  • 200 g Regensburger sausage
  • 200 g Thuringian bratwurst
  • 1 red bell pepper
  • 2 onions
  • 0.25 Cucumber
  • 2 Tomatoes
  • 4 tbsp plant oil
  • 2 tbsp white wine vinegar
  • 1 tsp medium-hot mustard
  • Salt
  • Pepper (freshly ground)
  • 2 hard-boiled eggs
  • 150 g Tilsiter cheese (cut into pieces)

    Wash the chives, shake dry and cut into fine ribbons. Peel the sausages and slice very thinly. Wash the pepper, deseed and cut into narrow rings. Peel the onions and cut into rings. Peel the cucumber, halve lengthwise, deseed and cut into thin strips. Boil the tomatoes briefly, shock in cold water, peel, quarter, deseed and cut into thin slices. Stir the oil with vinegar and mustard, season with salt and pepper. Mix the sausages with the remaining salad ingredients and vinaigrette, cover and refrigerate for 30 minutes. Peel the eggs and quarter them. Slice the cheese into narrow strips. Fold the eggs and cheese into the sausage salad and serve on a plate.
