- 1 onion
- 1 Tbsp clarified butter
- 800 g sauerkraut
- 150 ml dry white wine
- 250 ml meat broth
- 2 fresh bay leaves
- 1 tsp juniper berries
- Salt
- ground caraway
- freshly ground pepper

Peel and halve the onion, then slice into strips. In a pot, sauté in hot clarified butter for 1-2 minutes until translucent. Add the well-drained sauerkraut, deglaze with wine and a splash of broth. Add bay leaves and juniper berries, cover, and simmer over low heat for about 40 minutes, stirring occasionally and adding more broth if needed.
